Oak Mor  - plain or toasted

If you forgot to oak your wine and you are almost ready to bottle, use oak mor, as this product is small saw dust like particles.   It will impart about 90% of the taste in 24 hours.  You will be able to taste and re-dose again as needed to taste.  Guide-line for use is 19-38 grams per 5 gallons of white wine or .7 to 1.4 ounces per 5 gallons of white wine.  Usage for red wine is 38-95 grams or 1.4 to 3.4 ounces per 5 gallons of wine.  This settles nicely but you will need to rack before bottling.

1 level Tablespoon is about 3.3 grams

8.5 Tablespoons are about 1 ounce. 

Oak chips -American plain or toasted 
or French lightly toasted

your choice. 

Oak chips take longer.  Usage is about 1 ounce per 5 gallons of wine.  Some winemakers soak oak chips in a small volume of wine for 2 to 4 weeks, creating an extract that can be added to taste.  Other winemakers add them for the primary fermentation and rack them off after that with the lees.  Some add them after the primary so they can soak longer than for the 2 week primary.  Keep notes and you will find a way that suits your taste best.
